A family favorite | Veggies + Sausage on Rice



Ready for your life to change? This meal is one of the best things on the planet. Okay, that may sound like I am totally over exaggerating and maybe I am a little but, seriously I love this meal SO much. It is so easy and not super bad for you! Win win!

Note: some of these pics have my mom cooking/chopping and some have me. It was a team effort ;)

Start off chopping the veggies. Easy!
We use red pepper, green pepper, yellow and green squash and tomato.

 

My momma and the dog. Yep, molly loves to beg for food. "It is so fun to have her beg at us all the time!", she said SO sarcastically. 

 

The sausage! This (in my opinion) is the best part. We have been getting this brand lately but you could also do turkey sausage or any different flavors!



After all the Veggies and Sausage is cut, start your rice. This doesn't HAVE to go on rice but, we like it better just because, it makes it more of a meal rather than a side.



 Now time for cooking! Pour some oil in your pan and brown your sausage.


 Pour in your veggies and cook until tender.

 

 Add someone oregano, and that's it!


When your rice is finished, top it with the mix. It's delicious and the perfect little meal!

Veggies + Sausage on Rice

Ingredients


2 tablespoons vegetable oil
1/2 lb fully cooked smoked polish sausage, cut into 1/2-inch diagonal sllices
1 C. chopped onion
1 C. sliced celery
1/2 C. chopped green pepper
1 garlic clove, minced
1/2 teaspoon dried oregano
1/2 teaspoon pepper
4 to 5 medium zucchini, sliced
4 to 5 medium tomatoes, coarsely chopped

Directions


Heat oil in a large skillet, lightly brown sausage. Add onion, celery, green pepper, garlic, oregano and pepper. Cook and stir until vegetables are almost tender. Add zucchini and tomatoes; cook and stir until zucchini is just tener.
Yield: 8-10 servings
